Did you know.. That you can make keto-compliant chocolate bark right in the comfort of your own home,
Yeah come let’s do this first all you need is cocoa powder, cocoa butter, 80% dark chocolate, and monk fruit liquid drops
I also like adding roasted nuts to my keto chocolate bark and sometimes I throw in dried raspberries too for a tart flavor addition. You can also add cream but that’s entirely optional.
The first thing to remember when making chocolate is that all your equipment must be bone dry. Liquid of any form will cause chocolate to seize and that will completely ruin your end result.
I know that cocoa butter is probably an unusual ingredient to most people. Swipe to the last pic to see how raw cocoa butter looks like! It’s basically the solid fatty part of the cocoa bean and forms the base of all chocolate.
Ingredients –
- 1 tbsp PURE monk fruit drops (any brand).
- 120g cocoa butter
- 35g pure cocoa powder pinch salt
- 2 tbsp heavy cream/coconut cream
- 1 small square of at least 80% dark chocolate (8g or less) On a double boiler,
- “melt the cocoa butter until fully liquid, then add in cocoa powder and fully liquid, then add in cocoa powder and whisk until dissolved”
To create a double boiler, bring a pot of water to boil, turn down the heat to a simmer and place a glass or metal bowl on top, ensuring that the base doesn’t touch the water. Add the monk fruit drops and salt into the mixture and mix completely. Take the bowl off the double boiler and add in the piece of 80% dark chocolate and allow it to melt completely, and stir through.
This is going to temper the chocolate and encourage a smooth consistency. Add the heavy cream if using and whisk quickly to mix. Ensure that NO liquid enters the bowl during this process. Pour chocolate mixture onto a lined baking pan and top with chopped nuts or whatever topping you prefer, OR pour into a chocolate mold and allow to sit for 10 min in the water freezer. Transfer thereafter to the fridge and allow to sit for an hour.

KETO DESSERT (tarts with chocolate)

Today I’m gonna share with you one of my favorite keto dessert recipe named tarts with chockolate.
I invite you to some insane mini keto tarts with chocolate.
Ingrediants:-
- 45g coconut flour
- 50g soft butter
- 2 LG erythritol
- 1 egg
- ½ Igt xanthan gum Cream
- 150g cream cheese
- 75g dark chocolate without sugar
- 1 LG coconut oil
1 Igt rum essence For the tender dough, mix with a tablespoon of soft butter at room temperature, coconut flour, grated erythritol, egg, and xanthan gum (this makes the dough less crumbly).
Mix well until you get a perfect dough. Divide the dough into 3 and press it well on the bottom of some tart shapes with a detachable base (diameter 10 cm, like these).
We put the tarts in the freezer for 5 minutes, necessarily enough to harden the butter in the composition.
Then prick them with a fork and bake their tarts for about 15 minutes at 180C, or until lightly browned on the edges. For the filling, put in a non-stick pan the cream cheese, chocolate, coconut oil, the sweetener.
Mix well over low heat with a whisk until the chocolate melts and the composition is homogeneous, add the rum at the end.
Put the cream in the slightly cooled mini tarts, level nicely and put them in the cold for at least 1 hour, until the filling hardens.
Strengthens 3 mini tarts, but the quantities are easy to double or triple 🙂
