Chop suey is a Chinese-style dish of meat stewed and fried with bean sprouts, bamboo shoots, and onions, and served with rice.

It is a dish in American Chinese cuisine and other forms of Chinese cuisine, made up of meat (chicken, fish, beef, shrimp, or pork) and eggs, which is cooked quickly with vegetables such as bean sprouts, cabbage, celery and mix in a starch-thickened sauce.

The Chop Suey’s spicy taste makes it more delicious for America’s environment (since the Chinese don’t use a lot of spices but use large amounts of meat found in the suey.

Homemade Chop suey :

Time – 1 hour

Servings – 6

Chop suey ingredients :

  • 3 garlic cloves (finely chopped)
  • 1¼  tbsp oyster sauce
  • ½ tbsp soy sauce
  • 1 tsp salt
  • 1½ tsp cornstarch
  • 250g (approx) chicken, cut into ⅛   inch thick strips
  • 2 celery ribs (carom seed leaves/ajwain leaves) cut into ¼ inch thick slices
  • 100g peas (optional)
  • ¼  cup mushrooms cut into ¼ inch thick slices
  • 1 onion (cut into length but not so thin)
  • 1 green bell pepper cut into little thick strips 
  • ¼  cup mung (moong) bean sprouts (rinsed and drained)
  • ½ cup sliced water chestnuts
  • ½ cup sliced bamboo shoots
  • ¼ cup chicken broth
  • Vegetable oil
  • Water
  • Salt and pepper to taste

(The more ingredients you use, the more taste you get.)

Preparation :

Step 1 :

Take a bowl and add garlic cloves, oyster sauce, soy sauce, salt, and cornstarch and mix well. 

Now add chicken and marinate well and let it rest for 15 minutes.

(Keep cut vegetables separate.) 

Step 2 :

Heat a large pan on high flame. 

Add 1 tsp vegetable oil around the side of heated pan.

Then stir fry celery until crisp tender (for about 2 minutes). 

Now transfer celery to a large bowl. 

Step 3 :

Reheat the pan and stir fry each remaining vegetable separately (but fry bean sprouts for only 1 minute).

Add 1 tsp of oil to the pan before each batch and seasoning with salt.

Step 4 :

Transfer each vegetable to a bowl after fry.

Add chicken broth, 1 tsp oyster sauce, and 1 tsp cornstarch and mix well together.

Again reheat the pan on high flame.

Add 1 tsp vegetable oil around the side of pan, then stir fry chicken for about 2 minutes.

Step 5 :

Pour all the vegetables into the pan and toss well. 

Then add chicken broth mixture and stir well.

Wait for the sauce to a boil and then stir to combine with chicken and vegetables. 

Serve immediately hot, with cooked rice (optional)

{Chop suey consists of small pieces of meat, chicken which I  stir-fried with celery, onions, bean sprouts, water chestnuts, mushrooms or other vegetables, and served over rice, usually with soy sauce.}

Beef chop suey :

Time : 30-40 minutes

Servings : 2

Ingredients :

For the beef

  • 150g beef (cut into rectangle strips)
  • A pinch of salt
  • A pinch of sugar
  • ½ tsp cornflour
  • ½ tsp soy sauce
  • ½ tsp brandy/wine, (optional)
  • 1 tsp vegetable oil
  • 1 tsp water

For the dish

  • 1 tbsp vegetable oil
  • ½ sliced onion
  • 1 clove garlic (finely chopped)
  • 1 slice ginger (finely chopped)
  • 200g bean sprouts (washed and drained)
  • 1 tsp oyster sauce
  • 2 pinches of powder pepper
  • 1 pinch of salt
  • 1 tsp cornflour mixture
  • 1 spring onion( sliced)
  • 1 tsp soy sauce 

Method :

  1. Marinate the beef slices with salt, sugar, cornflour, soy sauce, brandy(optional), vegetable oil and water and mix well together. (Let it rest for 15-20 minutes)
  2. Heat up a pan on high flame (at this stage you can avoid oil) and fry beef slices for 2 minutes.
  3. Heat oil on high flame and fry onions, ginger and garlic for 1 minute.
  4. Now add bean sprouts and fry for approx 30 seconds and then add in the beef and fry for approx 30 seconds.
  5. Add 4 tbsp water when it starts to boil  and add oyster sauce, pepper and salt and mix well. 
  6. Then add the cornflour mixture and stir until the sauce is thickened. (Cook for 1½ minutes approx)
  7. Add spring onions to the pan and mix well. 
  8. Add soy sauce to taste. 

Serve with boiled rice or noodles.
